Now that meat can be hard to find, we need ways to cook whatever we can get.
I used my Instant Pot Duo Mini to cook pork stew. Here’s my recipe:
1 package stew meat
1 onion chopped into bite size pieces
1 bell pepper chopped into bite size pieces
juice from one lemon
2 cups stock (add salt to your taste)
Pressure cooked on high for 1 hour.

These days I need a calming activity that I can do at home. Painting works. The key for me is to let go of the outcome. Often, when I’m working on a new greeting card, I don’t at all like my art, but hours later, I look at it again and I’m happy with it. I’ve been using the Philips Sonicare Healthy White Electric Toothbrush for years. They last and last. The dental hygienist is nearly always happy with me. No scolding!
